Optimalisasi tumbuh kembang anak usia pra sekolah dalam upaya pencegahan stunting melalui inovasi olahan pangan lokal

Stunting menjadi program prioritas nasional yang membutuhkan perhatian serius, terutama di Kota Manado, Sulawesi Utara. Kota Manado termasuk dalam 8 daerah dengan kasus stunting tertinggi. Stunting dapat menyebabkan hambatan pertumbuhan fisik dan mengancam perkembangan kognitif yang akan berpengaruh pada tingkat kecerdasan saat ini, serta produktivitas anak di masa dewasanya. Anak – anak pra sekolah salah satu kelompok yang beresiko mengalami stunting, hal ini dikarenakan anak-anak yang mudah bosan dengan makanan yang dikonsumsi sehari-hari yang diolah secara monoton. Pengabdian ini bertujuan untuk memberikan penyuluhan tentang stunting dan mengenalkan inovasi olahan pangan lokal yang dapat berfungsi sebagai upaya pencegahan stunting. Kegiatan PKM dilaksanakan di TK. Khalifah dan RA. Raihanah dengan jumlah peserta 35 orang. Metode pelaksanaan kegiatan PKM dilaksanakan dengan 3 tahapan yang meliputi persiapan, pelaksanaan, serta evaluasi dan keberlanjutan program. Tahapan Pelaksanaan kegiatan ini diawali dengan pemeriksaan antropometri, sosialisasi, dan praktik pengembangan motorik anak. Kegiatan terakhir ialah evaluasi, berdasarkan hasil evaluasi peserta mengikuti kegiatan dengan aktif, terdapat 3 anak yang tinggi badannya berada pada kategori -3 SD. Lebih lanjut, hasil survey inovasi olahan pangan 100% peserta menyukai dimsum baik dari aroma, rasa, dan komposisi.

Abstract

Stunting is a national priority program that requires serious attention, especially in Manado City, North Sulawesi. Manado City is among the eight areas with the highest number of stunting cases. Stunting can cause physical growth impairment and threaten cognitive development, which may affect children’s intelligence levels and productivity in adulthood. Preschool children are one of the groups at risk of stunting because they tend to get bored with the food they eat daily, which is often prepared in a monotonous way. This program aimed to provide education about stunting and introduce innovations in local food processing as an effort to prevent stunting. The PKM activities were conducted at TK Khalifah and RA Raihanah with a total of 35 participants. The implementation method of the PKM activities consisted of three stages: preparation, implementation, and program evaluation and sustainability. The implementation stage began with anthropometric examinations, socialization, and practical motor development exercises for children. The final stage was evaluation. Based on the evaluation results, participants actively engaged in the activities. Three children were found to have a height in the -3 SD category. Furthermore, the results of the food processing innovation survey showed that 100% of the participants liked the dim sum in terms of aroma, taste, and composition.
