Abstract

Abstract

Technological innovation and the use of digitalization are essential to improve the quality and quantity of processed tofu products, enabling traders to expand their market and increase their income while positively impacting the surrounding community. Unutilized tofu waste can be transformed into value-added products through the application of appropriate technology. The Tofu Trader Group Empowerment Program through Innovation and Tofu Waste Digitalization, implemented by a team of lecturers, aims to improve traders' skills in processing tofu waste into processed products while introducing digital marketing strategies to enable the resulting products to compete in a wider market. The activity methods include observation, training, mentoring, and pretest-posttest-based evaluation. The results of the activity showed an increase in the average knowledge score of participants from 5.72 in the pretest to 7.83 in the posttest, with an n-gain score of 49%, indicating a significant increase in understanding. This program is considered effective in changing the mindset of traders from simply selling conventional tofu to being creative entrepreneurs who utilize waste to create new economic value.
