Edukasi penanganan pascapanen dan diversifikasi produk bernilai tambah bagi UMKM lokal di Kota Mataram dan Lombok Barat

Abstrak

Usaha mikro, kecil, dan menengah (UMKM) pangan di Provinsi Nusa Tenggara Barat (NTB) memiliki peran penting dalam mendukung perekonomian daerah, namun masih menghadapi berbagai kendala dalam penanganan pascapanen bahan baku pertanian dan pengembangan produk bernilai tambah. Kegiatan pengabdian kepada masyarakat ini bertujuan untuk meningkatkan pengetahuan dan pemahaman pelaku UMKM pangan mengenai penanganan pascapanen serta strategi diversifikasi produk berbasis bahan baku pertanian lokal di Kota Mataram dan Kabupaten Lombok Barat. Kegiatan dilaksanakan pada tanggal 18 Agustus 2024 di ruang kreatif The Elixir Coffee, Universitas Muhammadiyah Mataram, melalui seminar dan diskusi interaktif yang melibatkan pelaku UMKM pangan sebagai peserta. Materi yang disampaikan meliputi karakteristik bahan baku pertanian, faktor-faktor penyebab penurunan mutu, prinsip penanganan pascapanen, teknologi pascapanen sederhana, serta pengembangan produk bernilai tambah. Evaluasi dilakukan secara kualitatif melalui observasi, pencatatan diskusi, dan umpan balik verbal peserta. Hasil kegiatan menunjukkan tingginya antusiasme peserta serta bertambahnya wawasan mengenai pemilihan kemasan, teknik penyimpanan, dan peluang diversifikasi produk yang sesuai dengan kondisi usaha masing-masing. Kegiatan ini juga mengidentifikasi permasalahan utama yang dihadapi UMKM, yaitu kerusakan bahan baku yang cepat, keterbatasan fasilitas penyimpanan, dan rendahnya variasi produk. Secara keseluruhan, kegiatan ini memberikan alternatif solusi praktis untuk mengurangi kehilangan hasil pascapanen, meningkatkan efisiensi pemanfaatan bahan baku, dan memperkuat daya saing UMKM pangan lokal.

Abstract

Food micro, small, and medium enterprises (MSMEs) in West Nusa Tenggara (NTB) play an important role in supporting the regional economy, but they continue to face challenges in postharvest handling of agricultural raw materials and in developing value-added products. This community service activity aimed to improve the knowledge and understanding of food MSME owners regarding postharvest handling and product diversification strategies based on locally available agricultural commodities in Mataram City and West Lombok Regency. The activity was conducted on August 18, 2024, at the creative space of The Elixir Coffee, located within Universitas Muhammadiyah Mataram, through a seminar and interactive discussion involving food MSME owners as participants. The materials covered the characteristics of agricultural raw materials, factors affecting quality deterioration, principles of postharvest handling, simple postharvest technologies, and value-added product development. Evaluation was carried out qualitatively through observation, discussion notes, and participants’ verbal feedback. The results indicated an improvement in participants’ understanding, particularly in relation to packaging selection, storage techniques, and opportunities for product diversification according to the conditions of their respective businesses. The activity also identified the main challenges faced by MSMEs, including rapid raw material deterioration, limited storage facilities, and low product diversification. Overall, the activity provided practical solutions to reduce postharvest losses, improve the efficiency of raw material utilization, and strengthen the competitiveness of local food MSMEs.
