PELATIHAN PENGOLAHAN PANGAN BERBASIS JAGUNG UNTUK MENGATASI STUNTING DAN KEMISKINAN EKSTREM DI DESA WATU MORI, NUSA TENGGARA TIMUR
Abstract
Abstrak: Stunting masih menjadi masalah kesehatan serius di Indonesia, terutama di wilayah dengan kemiskinan ekstrem seperti di Kabupaten Manggarai Timur. Rendahnya pemanfaatan potensi pangan lokal, khususnya jagung, berkontribusi terhadap tingginya angka stunting dan kemiskinan ekstrem. Kegiatan pengabdian ini bertujuan meningkatkanpengetahuan dan keterampilan ibu-ibu PKK serta kader desa yang berjumlah 30 orang, dalam mengolah jagung menjadi pangan bergizi dan bernilai ekonomi sebagai strategi penanggulangan stunting dan kemiskinan. Metode yang digunakan adalah Participatory Rural Appraisal (PRA) melalui tahap persiapan, pelaksanaan, dan evaluasi. Hasilnya, terjadi peningkatan pengetahuan peserta dari rata-rata pre-test 60 menjadi 85 pada post-test, serta peningkatan keterampilan teknis dalam mengolah produk seperti tepung, tempe, puding, es, bubur ayam, dodol, mie dan beras jagung. Kegiatan ini juga mendorong munculnya potensi wirausaha lokal dan mendapat dukungan pemerintah desa. Intervensi ini terbukti efektif, kontekstual, dan berkelanjutan, serta layak direplikasi di daerah lain dengan karakteristik serupa dalam upaya percepatan penurunan stunting dan kemiskinan.
Abstract: Stunting remains a major public health issue in Indonesia, especially in poverty-stricken areas like East Manggarai Regency. Limited use of local food resources, particularly corn, contributes to both stunting and poverty. This community service program aimed to improve the knowledge and skills of 30 members of the Family Welfare Movement (PKK) and village cadres in processing corn into nutritious and marketable food products as a strategy to reduce stunting and poverty. Using the Participatory Rural Appraisal (PRA) approach covering preparation, implementation, and evaluation stages the program significantly increased participants’ knowledge, with scores rising from 60 (pre-test) to 85 (post-test). Skills improved in producing various corn-based products, including flour, tempeh, pudding, desserts, porridge, dodol, noodles, and corn rice. The activity also stimulated local entrepreneurship and gained strong support from the village government. Overall, the intervention proved effective, contextually relevant, and sustainable, and is recommended for replication in similar regions.
