OPTIMALISASI TATA KELOLA PRODUKSI DAN MANAJEMEN LIMBAH PADA UMKM DM SEAFOOD UNTUK MENINGKATKAN EFISIENSI DAN KEBERLANJUTAN USAHA
Abstract
Abstrak: Tujuan dari program pengabdian ini adalah untuk membantu UMKM di sektor pengolahan hasil laut dalam meningkatkan efisiensi operasional dan keberlanjutan usaha melalui optimalisasi tata kelola produksi dan manajemen limbah. UMKM di daerah pesisir Indonesia, khususnya dalam pengolahan hasil laut, menghadapi tantangan signifikan terkait keterbatasan teknologi dan pengelolaan bahan baku serta limbah yang tidak efisien. Program ini mengusulkan penerapan teknologi sederhana namun tepat guna, seperti freezer besar, spinner, dan gas deep fryer, yang diharapkan dapat meningkatkan kapasitas produksi dan mengurangi pemborosan bahan baku serta limbah. Metode yang digunakan dalam pelaksanaan program ini meliputi pendekatan partisipatif yang mencakup sosialisasi, pelatihan teknis, implementasi teknologi, dan evaluasi. Kegiatan ini melibatkan 10 peserta dari UMKM mitra yang berfokus pada penerapan teknologi baru dan peningkatan keterampilan manajerial. Hasil utama menunjukkan peningkatan kapasitas produksi harian dari 5-10 kg menjadi 20-25 kg, pengurangan produk cacat dari 15% menjadi 5%, serta efisiensi waktu pengelolaan limbah yang meningkat sebesar 30%. Evaluasi dilakukan dengan mengumpulkan data kualitatif dan kuantitatif terkait pengelolaan bahan baku, produksi, serta dampak lingkungan, yang menunjukkan keberhasilan program dalam meningkatkan efisiensi operasional dan keberlanjutan usaha. Program ini berkontribusi pada pencapaian SDG 8 dan SDG 12 dengan memberdayakan masyarakat pesisir dan meningkatkan daya saing produk melalui penerapan teknologi tepat guna dan sistem manajerial berbasis data.
Abstract: The purpose of this service program is to assist MSMEs in the marine products processing sector in improving operational efficiency and business sustainability through optimizing production governance and waste management. MSMEs in Indonesia's coastal areas, especially in the processing of seafood, face significant challenges related to technological limitations and inefficient management of raw materials and waste. The program proposes the application of simple but appropriate technologies, such as large freezers, spinners, and gas deep fryers, which are expected to increase production capacity and reduce waste of raw materials and waste. The methods used in the implementation of this program include a participatory approach that includes socialization, technical training, technology implementation, and evaluation. This activity involved 10 participants from partner MSMEs who focused on the application of new technology and improving managerial skills. The main results show an increase in daily production capacity from 5-10 kg to 20-25 kg, a reduction in defective products from 15% to 5%, and an increase in waste management time efficiency by 30%. The evaluation was carried out by collecting qualitative and quantitative data related to raw material management, production, and environmental impact, which showed the success of the program in improving operational efficiency and business sustainability. The program contributes to the achievement of SDG 8 and SDG 12 by empowering coastal communities and increasing product competitiveness through the application of appropriate technologies and data-driven managerial systems.
